I made these on the last day of school for my kiddos. They inhaled them with the force of a Shop Vac. The added fiber from the brown rice cereal and ground flax seed made me feel better about letting them enjoy them. And, of course, I had to do a little taste testing myself. These were winners.
1 Tb Smart Balance Light butter spread
10 oz mini marshmallows
6 cups brown rice cereal (I used Barbara’s Bakery Brown Rice Crisps Cereal)
1/4 cup ground flax seed
Place butter spread in a large bowl and melt in microwave, around 10-15 seconds.
Add marshmallows to the melted butter. Melt the marshmallows in the microwave, checking on them every 30 seconds or so. Don’t burn them! Mine took around 1 1/2 – 2 minutes.
Once the marshmallows are puffy and melted, add in the brown rice cereal and flax seed. Stir quickly to coat the cereal with the marshmallows.
Dump the entire mixture out on some wax paper to cool. When you can work with it, spray your hands with non-stick cooking spray and form them into 16 balls.
*You are welcome to put them into a pan and cut into squares, but my life’s mission to do as little dishes as possible. Thus the balls .
Makes 16 balls at 66 calories a piece.
