Like you, we have dozens of boiled eggs in our refridgerator and I’ve been smiling through my egg-heavy lunches for the past few days. It took me a few tries to come up with a egg salad recipe that’s a keeper, but this is it! Yum.
Egg Salad Sandwich
1 boiled egg, finely diced
2 boiled egg whites, finely diced
1 Tb Miracle Whip, light
1 tsp Dijon mustard
1/2 – 1 green onion, chopped
1/4 tsp dill
freshly ground pepper
1 slice of 100% whole wheat bread
3-4 tomato slices
Mix the diced egg, egg whites, Miracle Whip and Dijon Mustard until mixed well. Add dill and pepper and stir until evenly dispersed.
On a slice of whole wheat bread, add a few spinach leaves and tomato slices. Top with egg salad.
Each open faced sandwich is 255 calories (The egg salad is 135 calories, my bread is 120 calories per slice).
