Yes, you read that correctly. Chocolate. Avocado. The two best foods on the planet Earth in one muffin. I know, I know — now let’s get up off the floor and make them.
I’ll be honest: I had to make these in isolation so the Doc nor my kids saw the green avocado going in the mix. Although I am a HUGE fan of the heavenly food, they are not. However, you cannot taste it AT ALL. That’s a promise. And, with the mini chocolate chips thrown in there, they are a big time treat around here. My kids are eating them for breakfast and think that they just got away with something.
The truth is, I love that my kids are downing avocado and not even realizing it. All that fantastic monounsaturated fat, fiber, and vitamins just going down muffin after muffin.
It’s enough to bring a tear to my eye.
Chocolate Avocado Mini Muffins
1 large, ripe avocado
1 cup sugar
3/4 cups applesauce, unsweetened
3/4 cup skim milk
2 2/3 cup whole wheat white flour
1/2 cup cocoa powder
1 Tb baking powder
1/2 tsp salt
1 cup mini chocolate chips
Heat oven to 375 degrees. Spray mini muffin tins with nonstick cooking spray.
Beat the avocado and sugar together around 2 minutes until smooth. Add the rest of the ingredients and beat until well blended. Fold in chocolate chips.
Spoon into muffin tin. Bake for 15 minutes. Makes 48 muffins at 73 calories a piece.
